What is Laughing Dragon? Laughing Dragon is the name under which Jonathan Baird labels most, if not all, of his brewing projects. I have been homebrewing for just about four years now (though I've been researching much longer) and have thusfar tried my hand at beers, meads, wines, ciders, soft drinks, and cordials - as well as quite a few beverages that fall between those neatly defined categories. To me, the art of brewing is all about the experimentation and seeing what sorts of tasty concoctions I can whip up next.
I had originally developed an appreciation for wine tasting, which grew further into an appreciation of beer - of course helped along greatly by the upsurge of micro and craft brews available in the US over the last several years. At some point along the line I attempted to go from just a "refined" and educated palate to gaining an actual knowledge on the subject of brewing, though I would still say there is plenty for me to learn. More recently I have been focusing on combining my homebrewing hobby with another of my involvements, the SCA, and have been attempting to learn more about the history of brewing, vinting, mazing, etc both in and out of the medieval period. Though I never let that get in the way of brewing a good stout!
