Here's a couple recipes that have been requested...
Chocolate Vodka
(modified from "The Vodka Cookbook" by John Rose)
3 cups Smirnoff No.21 vodka
1 cup white granulated sugar
8 oz. chocolate chips (the brand and type used will have a profound effect on the results - semi-sweet is recommended, but I have used dark to good effect)
1 tsp pure vanilla extract
Vanilla added to vodka while 1 pint of water brought to a boil. Chocolate melted in another pot over the steam (if you have a double boiler, that is ideal for this part). Sugar mixed into melted chocolate. Combine everything in a large jar, and stir. Shake several times a day for the next two days. Strain and bottle. Makes 1 liter. Shake before serving.
If you have a lot of patience, keep this in a wide-mouth jar and allow to sit several weeks. Then skim off the "pudding" for a clearer beverage that doesn't require blending at each serving. (The "pudding" is good on ice cream :)
Coffee Liqueur
(from "Making Cordials and Liqueurs at Home" by John Farrell)
2 inches Spice Islands Bourbon vanilla bean
3.75 cups white granulated sugar
7 tbsp Kava instant coffee
3 cups Smirnoff No.21 vodka
Cut your vanilla bean into 3 equal pieces and add to a pot with the sugar and 2 cups water. Bring to a boil and boil for 30 minutes. Be very careful to not let it burn! The sugar will caramelize and turn into a dark, thick syrup. Allow to cool (really!). Dissolve the coffee in 1/4 cup boiling water. Mix coffee with sugar syrup. Allow to sit for 2 weeks. Strain and bottle. Makes 1.5 liters.
